Cabbage Soup in a SnapIf you’re looking for a jump-start-to-spring soup idea – or just a way to use up your leftover St. Patrick’s day cabbage – check out this Cabbage Soup Recipe from Vitamix.

Easy to make, and gads tastier than cheesy cabbage soup diet soups, you can whip this one up in your blender or juicer in no time (with or without the potato):

  • 4 cups cabbage
  • 2 cups chicken broth
  • 2 Tbs white wine
  • 1 medium onion, peeled, quartered
  • 1/2 medium carrot
  • 1 large potato, baked, quartered
  • 1/4 teaspoon caraway seed
  • 1 teaspoon dried ill wee
  • 1/4 teaspoon hot sauce
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper

These instructions are for use in a Vitamix – the soup actually cooks in the blender – but can be modified for other blender brands:

  1. Place all ingredients, except cabbage, into the Vitamix container in the order listed and secure lid
  2. Select Variable 1
  3. Turn machine on and quickly increase speed to variable 10, then to High
  4. Blend for 6-7 minutes or until heavy steam escapes from the vented lid
  5. Meanwhile, cook cabbage in large skillet with 1/2 – 1 cup water or until tender
  6. Drain excess water. Place cooked cabbage in serving bowls. Pour soup over cabbage

Per 1 cup serving:

  • 133 calories
  • 1 g fat
  • 5 g fiber
  • 708 mg sodium
